The Cacao of Excellence R&D Laboratory and Training Centre in Perugia is opening a training opportunity for professionals active in the cacao sector. Participants will strengthen their technical skills in cacao quality assessment and cacao mass processing for sensory evaluation.

Reception and physical quality assessment of beans
Cut tests and roasting protocol determination
Roasting, breaking, and winnowing
Processing into cacao mass
Formulating and transforming cacao mass into chocolate
Tempering and moulding
